This cranberry salad with apples is at every table during the holiday season in our family. And it’s made me think that Thanksgiving is more than a feast and football, it’s about being grateful. Grateful for what we have and more importantly who we have in our lives. It’s about family. Family and friends, we are surrounded with today and those we have gathered with and loved throughout our lives. Those are the lives and loves we honor at Thanksgiving.
We honor them with our traditions and time-honored ways of celebrating Thanksgiving. Perhaps it’s your great-grandmother’s apple pie, or a new dish discovered at last year’s Friendsgiving. And there is nothing like connecting with loved ones than through a handwritten recipe. Meet my Aunt Eva. She is present at every holiday meal through this time-worn, much-loved recipe. Aunt Eva’s Cranberry Salad. For us, it is more than fruit, sugar, and nuts.
Aunt Eva’s Recipe
what you’ll need:
- 1 package raw cranberries
- 1 large can crushed pineapple
- 1.5 cup sugar
- 1 large apple quartered
- 1 cup pecans
- 2 small boxes of cherry jello
- 1.5 cup boiling water
Mix hot water and cherry jello in your designated serving dish. Stir well to completely dissolve jello. Chill until it just begins to set. This usually takes about an hour. You’ll want to check it often.
While you are waiting for the jello, add 1 package of raw cranberries into a food processor and grind. I like to mix mine until they are diced consistency. I use the pulse button to make sure they dont get ground up too small. Remove from food processor and set aside in large mixing bowl.
Add large apple to food processor and grind apple. When finished, remove from the food processor and put in the bowl with cranberries.
Add 1 cup pecans to the food processor and grind. When you have finished, mix nuts with cranberry and apple mixture.
Drain your 1 large can of crushed pineapple and add to other ingredients. Combine the sugar with the cranberry, apple, pineapple, and nut mixture. When jello is just beginning to jell, add cranberry mixture. Garnish with pecan halves if desired. Return to fridge to set. Serve cold.
